Week Ten Recipe: Pine Nut Crusted Mahi

What's this...another fish recipe from the fish hater?  Hard to believe, but I found another recipe where you taste everything but the fish.  This week's recipe comes from Kalyn's Kitchen.  


Here's mine

Ingredients:
2 mahi  fillets, about 6 oz. each (or use any mild white fish)
3 T coarsely chopped pine nuts
2 T Parmesan Cheese
1/4 tsp. finely minced garlic 
1 tsp. basil pesto 
1 1/2 T light mayo

Instructions:
Take your fish out of the fridge about a half hour before preparing so it comes to room temperature.  Preheat oven to 400.  Spray a casserole dish with non-stick spray.

 Mix together chopped pine nuts, Parmesan cheese, minced garlic, basil pesto, and mayo.

Spread the crust mixture evenly over the surface of each fish fillet.

Bake fish 10-15 minutes, until fish is firm to the touch and crust mixture is starting to lightly brown.
PLEASE NOTE: I found I had to cook the fish closer to 20 minutes and to get that nice golden crust you will have to set your fish under the broiler for a minute.

This recipe has lots of flavor and the nuts add a nice crunch to the texture.
